Scallopini organic free-range chicken dusted in homemade breadcrumbs and pan fried golden brown. Accompanied with fines-herb spaetzle and fresh Kumu Farm greens tossed with house-made strawberry-vanilla vinaigrette.

Your choice of preparation :
PICCATA – Finished with a shallot-garlic-capers lemon beurre blanc.
MARSALA – Finished with baby shiitake & ali’i mushrooms, dry & sweet marsala wine, veal demi glaze and splash of heavy cream.
COTOLETTA – Topped with a fresh salad of arugula, heirloom cherry tomatoes, Bocconcini mozzarella, tossed in a lemon-truffle vinaigrette and drizzled with brown butter and age balsamic.
